What is Liberty Station American Tavern & Smokehouse?
The top of Scottsdale Road has a bar problem: the last three miles before Carefree Highway are gated golf communities, and gated golf communities do not build taverns. Liberty Station American Tavern & Smokehouse is the fix. It has held the corner of the Terravita Marketplace at 34522 N Scottsdale Road, #180 since 2016, and for Terravita, Winfield, Sincuidados and the rest of the North Scottsdale border country it is simply “the bar.”
It is owned by Keeler Hospitality Group, the family company of Paul and Judy Keeler, who ran restaurants across the country for decades (Paul’s résumé included Hilton and Doubletree) before “retiring” to Arizona and opening more with their three children. The Boston roots show up on the menu, and the company’s other rooms are Keeler’s Neighborhood Steakhouse in Carefree’s Spanish Village, Spencer’s for Steaks & Chops in Omaha, a second Liberty Station in Madison, Wisconsin, and, since 2023, the speakeasy Poppy’s Office in the suite next door.
The thing you notice first is the smoker: a 500-gallon custom rig from Camelback Smokers, parked in view on the west patio and nicknamed Big Poppy after Paul. It does the brisket, pork shoulder, ribs, wings and prime rib for a menu the company calls American comfort food with regional touches, run by executive chef Anthony Apolinar. The bar side is vintage cocktails, local craft beer and a long wine list, open from 11 a.m. to last call every day.
Our verdict: a competent, generous neighborhood tavern that matters more for where it is than for what it cooks, and a daily 3 to 6 p.m. happy hour that is the best deal north of Pinnacle Peak Road.
The Happiest Hour and the smoker schedule
Hours worth knowing. Lunch and dinner run 11 a.m. to 9 p.m. daily, but the bar keeps going to last call, which on a weekend up here means later than anything else within a ten-minute drive. Sunday brunch opens at 10 a.m. and runs to 3. The Happiest Hour is 3 to 6 p.m., seven days, with its own menu, and it is the reason the bar stools fill before the dining room does.
What to order. Anything that came off Big Poppy. When the company opened its DC Ranch room in 2018 it listed the smokehouse lineup as Texas-style brisket, Carolina pork shoulder and St. Louis spare ribs, with honey-butter cornbread, Boston baked beans and green chile mac and cheese on the side, and the Terravita menu is the one that lineup echoed. The Boston nods are the point of the baked beans. The bar’s house style is the vintage cocktail, and Judy’s limoncello turns up in the family’s drinks next door at Poppy’s.
The crowd and the calendar. Weekdays it is Terravita and Terravita Golf Club members, Carefree couples and contractors on the way back down the hill. Weekends bring families, because the patio and the smoker make it a kids-friendly room by daylight. The Carefree Fine Art and Wine Festival and the Carefree Christmas Festival fill it on their weekends, and WM Phoenix Open week does not, which is a point in its favor.
Getting there. It is a shopping-center lot, with Poppy’s Office one door east, and the Carefree bars a few minutes north. Dinner here and a nightcap at Poppy’s is the Terravita evening. For the wider picture, see the happy hour guide and the speakeasy guide.
From Market Street Kitchen to Big Poppy
The Keelers’ Scottsdale story starts eight miles south, at Market Street Kitchen in DC Ranch, which the family opened in 2012 with a beverage program that won awards. Liberty Station came four years later, in 2016, at the opposite end of the city’s price map: Terravita is a master-planned, gated golf community, and its marketplace is one of the very few commercial strips between Pinnacle Peak Road and the Carefree town line. A tavern with a smoker on the patio was a smart read of the room.
The company liked the formula enough to repeat it. In fall 2018 it converted Market Street Kitchen into a second Liberty Station, keeping the DC Ranch interior and bar program and adding the smokehouse menu, with penny drafts for the first week of October. That room has since closed, and the Market Street space became Tomu-San Sushi in late 2025, so the Terravita original is again the only Liberty Station in Arizona; the name lives on in Madison, Wisconsin.
Paul Keeler died in 2021, and the family’s response says something about how they run the place. Rather than put his name on the tavern, they built his office next door: Poppy’s Office, a 1,500-square-foot speakeasy that opened on October 17, 2023, with his desk at the entrance and his sayings on the walls. Matt Keeler is CEO, Ryan Keeler joined in 2020, and Judy, with 48 years in the trade, is the matriarch. The smoker had already been called Big Poppy before any of that.
Honest assessment: Liberty Station is not a destination smokehouse; Valley barbecue obsessives will find better brisket in Phoenix. It is something more useful, a well-run neighborhood tavern in a part of Scottsdale that has almost none, with a daily happy hour, a real bar and a kitchen that feeds families. It earns its place on our list of every bar and club in Scottsdale as the anchor of the city’s northern edge, and as the room that made the speakeasy next door possible.
