Must order: The protein pancakes, ordered as the meal rather than a side

Insider tip: It closes by mid-afternoon, so don't plan a lazy 2 PM brunch — get in before 9 AM on a weekday and let the fast kitchen handle the rest.

The trendy brunch rooms charge extra for a protein bowl with a clever name. U.S. Egg, family-run in Arizona since 1986, was loading protein pancakes with fruit and granola back when the rest of the country considered that a gym-rat eccentricity.

The formula is Arizona diner, tuned: big omelets, quick service, and honest prices on a stretch of Scottsdale Road that has otherwise stopped offering those. Treat the pancakes as the meal.

When to go: weekday mornings. Weekends and spring training bring lines, though turnover is fast, and the doors close by mid-afternoon regardless.
