Must order: Hama chili and the machi cure, then whatever the chefs suggest

Insider tip: Skip the prime-time reservation scramble and walk in to the sushi bar early or late midweek — the chefs narrate, and the daily specials are where they show off.

Tyson Cole’s Austin sushi house landed at Scottsdale Road and First Street in 2024 and went straight into the top tier. It isn’t traditional and doesn’t pretend to be — the kitchen plays with citrus, chile and cure in ways that make the sake-bomb rooms down the street look lazy.

Start with the hama chili — yellowtail, ponzu, orange, thai chile — and the machi cure, then hand the rest of the evening to the daily specials.

When to go: midweek, early or late, at the bar. Prime weekend tables book out well ahead, and the check lands in fine-dining territory either way.
