Despite the name, this is not a tiki bar. Tiki-taka is the Spanish short-passing style of soccer, and Richard Blais’s restaurant at the renovated Grand Hyatt pairs Japanese sushi with Spanish tapas — the most original idea among the resort’s six new venues, and worth the drive for non-guests.
Don’t split the table into a sushi camp and a Spain camp. Order in alternating rounds — nigiri, then tapas, then back — because the whiplash is the whole point.
When to go: weeknights, or any time outside January through April, when resort guests keep the room busy.
