The Scottsdale Resort at McCormick Ranch turned a corner of its convention wing into a bar you have to be told about. The Madam hides behind a decorated bookshelf in the Social Boardroom, and the shelf does not swing until someone on your side says the password. Resort guests get it at check-in; the rest of us ask staff or scroll the resort’s social feeds. Inside is a maroon room, pressed-tin ceiling, amber candles and roughly eight seats.
The list is short and built around Arizona spirits. Doctor’s Orders, a bacon fat-washed bourbon number, is the one people come back for; Madam’s Whisper uses Whiskey Del Bac. Light bites run to crab cakes and bacon-wrapped dates. Book on OpenTable, because eight seats is eight seats.
When to go: evenings from 5:00 PM. Which nights it opens has shifted more than once, from Wednesday through Saturday to longer weeks, so check the resort page before you drive over.
