Hotel Adeline is a mid-century motor lodge redone for the pool-party set, which makes it an odd address for a whiskey bar. That is the joke. Off the lobby stands a vintage telephone booth; step in, lift the receiver, say the password, and a hidden door opens onto Straight Up, a low-lit room with a serious back bar and a small patio for smokers and talkers.
Whiskey is the point. Flights are arranged by region or built to order, and the local pour to ask for is Whiskey Del Bac, the Tucson single malt dried over mesquite that tastes like a campfire in a good way. The cocktail list is short; telling the bartender what you like works better. Small plates keep it from becoming a mistake.
When to go: the hotel lists 7:00 PM to close daily as of this writing, though earlier in its run it kept a Thursday-to-Saturday schedule. Call the desk, get the password, and go before 9:00 PM for a seat at the bar.
