Casinos put the cheap, good restaurant on the way to the slots, and at Talking Stick Resort it happens to be a nineteen-seat New Orleans seafood counter. Oysters, steamers, gumbo and Cajun boils come out of an open station, priced a full tier below the resort-corridor seafood houses across the freeway.
The trick is the heat scale: you pick your spice from one to ten, so a table can split a mild two and a punishing nine. Ten is a dare, not a flavor.
When to go: a weekday at 4:00 PM for happy hour. There are no reservations and no waiting area, so a Saturday at seven means standing among the slot machines.
