Most resort Mexican restaurants are margarita delivery systems with a view. La Hacienda has been the Princess’s original dining room since 1987, spent the 1990s building a national reputation, and later got a modern reworking from chef Richard Sandoval under his Old Ways, New Hands philosophy.
The tequila program is deep enough to call a library, and the guided flight is the real first course. After that, skip anything your neighborhood spot does well and let the servers steer.
