Fifth Avenue has plenty of cafes competing on pastel decor and whipped toppings. Cartel competes on the bean: the Tempe roaster that helped start Arizona’s third-wave scene in the late 2000s, pouring its own single origins in an industrial room that looks like a roastery, not a stage set.
The pour-over is the order — the clearest look at what the roasting program is doing. The baristas will talk origin and roast date without making you feel quizzed.
When to go: early weekday mornings, with the regulars and the laptops. Thursday ArtWalk nights flood the block — fine for people-watching, bad for finding a seat.
