Scottsdale breakfast has two schools, and one of them involves a DJ. Butterfield’s, on Shea since 2005, is the other: an old-school pancake house with super omelettes, bottomless coffee, and servers who confirm the regulars’ orders rather than take them.
The apple pancake is the event — baked until it caramelizes into something close to pie, and big enough for two. Round it out with the corned beef hash, crisped properly rather than steamed.
When to go: the 6:30 AM open, alongside the corridor’s early-rising retirees. Weekends between eight and eleven bring the crowd, and the griddle shuts at 2:30 PM.
