Resort dining rooms charge you for the view, the valet and a wine list marked up two and a half times. Atlas Bistro skips all three: a tiny white-tablecloth room in a South Scottsdale strip mall, bolted onto a retail wine shop, cooking tasting menus that keep landing on the city’s top fine-dining lists.
The trick is BYOB with no corkage. You buy the bottle next door at shelf price, walk it to the table, and let a constantly changing global menu do the rest.
When to go: weeknights — same menu, calmer room, more time with the staff. Weekends and the winter season book up days out, so reserve rather than gamble on a walk-in.
